Spicy Mango Chicken Stir-Fry
A vibrant and flavorful dish combining sweet mango with spicy chicken in a quick stir-fry.
Ingredients
- 2 large chicken breasts, sliced
- 1 ripe mango, diced
- 1 red bell pepper, sliced
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp vegetable oil
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp sriracha sauce
- 2 green onions, sliced
- 1/4 cup chopped cilantro
- Lime wedges for serving
Instructions

In a small bowl, mix soy sauce, honey, and sriracha. Set aside.

Heat oil in a large wok or skillet over medium-high heat.

Add chicken and stir-fry until golden, about 5-6 minutes. Remove and set aside.

In the same pan, add garlic and ginger. Sauté for 30 seconds until fragrant.

Add bell pepper and snap peas. Stir-fry for 2-3 minutes until crisp-tender.

Return chicken to the pan. Add the sauce and mango. Stir-fry for another 2 minutes.

Remove from heat. Stir in green onions and cilantro.

Serve hot with lime wedges and your choice of rice or noodles.
